Earlier this year at work we did another Eat Well Live Well Program designed by Wegmans to improve eating healthy and getting in more exercise. Every week we had a healthy snack at work to help us get in our vegetables and fruits plus provide ideas we could use at home. This is one of the smoothies we had as part of this program. This one is different then what I have made in the past since it has baby spinach as a main ingredient! I was hesitant at first but it was good! Below is roughly the recipe I followed when making it at home. You will need to decide how much peanut butter you want since it can overtake the smoothie. I added more to one of my batches and it was a bit strong. So be conservative and do a few taste tests to determine your ratio of ingredients. I love baby spinach and for my lunch I often have a baby spinach salad with vegetables and homemade vinaigrette dressing. Plus I add protein like hard-boiled eggs or chicken. But for those who don’t like salads or is looking for another option, try this recipe to see if you like the smoothie.
2 Bananas, Sliced and Frozen
2 – 3 tbsp Peanut Butter
1 cup Nonfat Vanilla Greek Yogurt
2 cups Unsweetened Almond Breeze Milk or Skim Milk
4 cups Baby Spinach
Place all ingredients into a blender that can handle frozen fruits and blend until smooth!
