Creamy Chocolate Banana Pie with Crushed Mint M and Ms sliced final

Is everyone enjoying the Olympics? I really love the winter Olympics and always look forward to them. My favorite events are the snowboarding, skeleton, and bobsled. I am always amazed at the dedication of these athletes to practice their sport to a level of perfection. Also I am disappointed for them when someone makes a mistake that you know they practiced perfectly so many times. The women’s USA hockey team was doing really good and I was sorry to hear how they lost the gold medal. That has to be so hard to dominate a game and then lose it at the end. Especially since they missed the empty goal shot – that has to hurt! Though that is hockey for you – you just never know – the game changes so quickly. I can imagine some of the players will be reviewing the game over and over in their heads. I know I would! I will be sad when the games are over as the events make a bitter cold winter a little easier to get through.
What is your favorite Olympic event?

As I discussed in my other postings, I love taking a recipe and trying different variations like I did with my pancake series and strawberry shortcake series. When I made my Creamy Banana Pie with Coconut there were so many variations that would make it different each time you make it. This recipe, like my Double Layered Banana Pie with Pistachios and Chocolate, is similar to the original except this time I used chocolate pudding and crushed Mint M&Ms made with Dark Chocolate as a topping. I had bought the M&Ms to make Christmas cookies but then ran out of time. So they sat in the pantry and then the inspiration hit me. Why not use them as a topping! The mint M&M’s are festive, add a nice mint flavor to the chocolate pudding, and would make a great St. Patty’s day pie! Plus the M&M’s are great to eat without having a pie. I should not have this bag of M&M’s because now I will be eating the entire bag – luckily it is a small bag.

Creamy Chocolate Banana Pie with Crushed Mint M and Ms full pie

1 Graham Pie Crust
2 Bananas, ripe

1 4-serving size box of instant sugar free, fat free chocolate pudding
2 cups cold skim milk
1 cup whipped topping, light, thawed (in a tub)

Whipped Cream
Crushed Mint M&Ms made with Dark Chocolate

Filling Preparation
In a bowl make the chocolate pudding by adding the cold milk to the chocolate pudding mix. Blend for 2-minutes and place in the refrigerator to chill for 5-minutes. Gently fold in 1 cup of the whipped topping.

Crust Preparation
Slice bananas and place in the bottom the pie crust. Pour the chocolate pudding into the pie crust. Place in the refrigerator until it sets..

Finish and Serve
Before serving, sprinkle crushed mint M&Ms made with Dark Chocolate on the top and then finish with whipped cream to decorate the edges if desired.

      🙂 This one was really good with the Mint M&Ms – and of course there were a lot of M&Ms left over… but somehow they are all gone!
