If you enjoyed my Buffalo Style Meatballs, which reminds us of Buffalo Chicken Wings, then you are going to love these Buffalo Style Potatoes! What a fabulous compliment to the meatballs for a Super Bowl party or any time you want a really fun dinner. Both dishes could be served at a dinner party or as appetizers at a gathering. FoodTV was my inspiration for this recipe but I made changes including using baked potatoes that I made a couple of days earlier to make them quick to cook for dinner. Plus I made the dressing a couple of days earlier. I always love when you can partially make a dish ahead of time and just finish it when you get home from work. The dressing is so easy to make and you cannot get enough of it especially with the addition of blue cheese! This is another dish that uses the Original Anchor Bar Wing Sauce – just select your favorite heat.
What did everyone think of the Super Bowl? Or do I really need to ask? I did enjoy the half time show. I did not know who Bruno Mars was – I thought he must be pop music, which I do not listen to. However, I was pleasantly surprised by his show – a good entertainer that reminds me of the 50’s style approach to music. It was a really good, clean family act, which is refreshing. Of course I know who the Chili Peppers are and am glad they behaved for the show.
1/2 cup Mayonnaise, light
1/4 cup Original Anchor Bar Wing Sauce – your favorite heat
1/8 tsp Smoked Paprika
4 large Russet Potatoes
Peanut oil, for frying
Seasoned or Kosher salt
Crumbled blue cheese
I made this a couple of days earlier. Mix the mayonnaise, Original Anchor Bar Wing Sauce and paprika in a bowl. Cover and refrigerate until dinner.
Bake the potatoes – I did this a couple of days earlier and kept them wrapped in foil in the refrigerator. Cut potatoes into desired size – I left the skins on the potatoes. I think it makes them more interesting to eat.
Add peanut oil to a heavy pan to cover the bottom and heat. Add potatoes and cook for about 10-minutes on each side – turning periodically. Seasoned with salt and pepper.
Transfer the potatoes to a platter and top with the dressing and blue cheese. You could garnish it with parsley and additional smoked paprika. I like to serve it with a side of the dressing so you can add more because it is that good!
