Is everyone ready for the Super Bowl? Our first dish “Buffalo Style Meatballs” has already made an appearance during the pre-game shows. This recipe is awesome especially if you use Original Anchor Bar Wing Sauce – these meatballs remind us of Buffalo Chicken Wings! But a much healthier version. I made mine with ground turkey but you could also use ground chicken for an even more authentic version. For Super Bowl Sunday I like to try different recipes. I was inspired from FoodTV Magazine for this recipe and you can find the original recipe here. Plus you can read the original story about chicken wings and how they originated in Buffalo, New York. It has been a long time since I have been to the Anchor Bar but it is definitely an important part of our local history.

As usual I did make some minor changes to the original recipe and I am sure you will too! In Buffalo we have the famous Buffalo Chicken Wings! This recipe is similar but a bit healthier since I use turkey and bake the meatballs instead of deep-fried chicken wings! It is a fun dish that you can serve as a meal or make them small as an appetizer. You can dip the Buffalo meatballs in bleu cheese sauce similar to what we use for chicken wings. Plus feel free to serve them with additional wing sauce. Be sure to use your favorite heat – whether it be hot or medium. I could not stop eating them!! I just serve different dishes throughout the day as they are ready. Now I am waiting for my pizza log that is baking in the oven! Plus special home-fried potatoes with wing sauce and bleu cheese dip. And for dessert… a homemade Creamy Banana Pie! What is on your Super Bowl menu??

Buffalo Style Meatballs on Stovetop

Ingredients
Step 1:
Vegetable oil, for brushing
2 tbsp sour cream
3/4 cup panko breadcrumbs
1 large egg

Step 2:
1 carrots, shredded
1 stalks celery, finely diced

Step 3:
1 pound ground turkey
2 scallions, finely chopped
1/2 tsp parsley, dried
1 clove garlic, grated
1/4 tsp freshly ground pepper
1/2 tsp Kosher salt

Step 4:
1 tablespoon olive oil
2 scallions, finely chopped
1 cup low-sodium chicken broth
1/2 cup Original Anchor Bar Wing Sauce – your favorite heat
1/2 cup ketchup

Blue Cheese Dip:
1/2 cup crumbled blue cheese (2 ounces)
3/4 cup sour cream

Serve with:
Carrots and celery
Original Anchor Bar Wing Sauce

Step 1:
Preheat the oven to 400 degrees F and spray two cooking pans with stick-free spray. Mix 2 tablespoons sour cream and egg until smooth in a large bowl and then add the panko; let sit 5 minutes.

Step 2:
Add shredded carrot and diced celery into the bowl with the panko mixture.

Step 3:
Add the meat, scallions, parsley, garlic, pepper, salt and mix with your hands until combined. Dampen your hands and shape the mixture into desired size. You can make mini meatballs for an appetizer or regular size. Arrange them on the prepared baking sheet. Bake until browned, about 12 minutes; flip over and cook for a few more minutes or until browned.

Step 4:
Add olive oil in a large pot over medium-high heat. Add scallions and cook until wilted, about a minute. Add the chicken broth, Buffalo wing sauce and ketchup; bring to a boil, then reduce the heat to medium low. Simmer until the sauce slightly thickens. Add the meatballs; spoon sauce over the meatballs, cover, simmer until tender and cooked through.

Blue Cheese Dip:
Mix the blue cheese and sour cream in a small bowl. Transfer the meatballs to a bowl and serve with the vegetable sticks and blue cheese dip.

    Yummo. I gave in at the last minute….we’re having Kara-age chicken wings, veggies, dips, and what I call “Bag o’ Snacks Buffet” – TGI Fridays onion rings, TGI Fridays Potato Skins chips, Pretzels, Corn chips, and homemade salsa….and lots of sparkling lemonade and iced tea to wash it down with. I’m going to do these meatballs in a couple of weeks, I think for Valentine’s day for my husband. I know we’ll both love them as we eat them and watch an Avengers’ marathon!

      Your SuperBowl food sounds fantastic!! We just finished a slice of Banana cream pie that I made yesterday. I am not into football but on SuperBowl Sunday I like the food, commercials and sometimes the half time show. I did like some of the pre-show interviews and programs. It has been a good day.

        Yes, it has. I enjoy the commercials and this time blogging. I have a bunch of awards to share with folks. and thank the good people who awarded them. It will take me a few days to get it together. I like banana cream pie. Is yours a baked custard one or the “cold” kind?

        This is the first time I made a Banana Cream Pie and I made a cold, no cooked version. I am not really a baker so this tends to work for me; but maybe one day I will try a baked one. 🙂

      Sounds good Michael!! Super Bowl Sunday is all about the food for me. I made a few dishes throughout the day and we just eat something when they are ready. We started the Super Bowl with a slice of Banana Cream pie that I made yesterday.

  4. Although the Super Bowl is over, I think your meatballs would be enjoyed here while watching any sports event. I have a feeling I’d be having way more than I should. I made a black bean salsa and garlic wings with gorgonzola dipping sauce. The meatballs would have made a nice addition to our menu last night!
