This time of year I am always looking for a new recipe or inspiration to use with apples. I got this recipe from here. I did make the caramel sauce but I did not like it – far too sugary and nothing like caramel. But this is a very easy recipe to make and you can top it with ice cream, whip cream or any of your favorite toppings. If you need to bring a dish to a party you can easily make it when you get home from work. The batter is a bit different, as it seemed like I was missing a liquid – but when you mix in the apples it adds moisture to the mix. I like heating the cake before serving topped with ice cream – very tasty!!

1/2 cup Butter, softened
3/4 cup Sugar
1 Egg
1 cup Flour
1/2 tsp Baking Soda
1/2 tsp Nutmeg
1/2 tsp Cinnamon
2 cups chopped peeled Apples
1/2 cup chopped Walnuts

In a small bowl, cream butter and sugar until light and fluffy. Beat
in egg. Combine the flour, baking soda, nutmeg and cinnamon;
gradually add to creamed mixture and mix well. Stir in apples and walnuts.

Pour into a greased 8-in. square baking dish. Bake at 350° for
30-35 minutes or until a toothpick inserted near the center comes
out clean.
