This is a great time of year when the leaves are changing colors and a crispness comes into the air. It is a time when everyone wants to make apple pies, pumpkin pies and a lot of other good fall inspired dishes. Often we have pumpkin puree left over and it would be terrible to throw it away. Here is a great pumpkin pie pancake recipe that is inspired by the pies I make with a lot of spices. I am a big fan of using a lot of different spices in my pies so it makes sense that my pumpkin pie pancakes should also have a lot of spices!
1 1/2 cups Flour
2 tbsp Brown Sugar
2 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Ginger
1/2 tsp Nutmeg
1/4 tsp Clove
1/2 tsp Salt
1 cup Skim Milk
½ cup Pumpkin Puree
2 tbsp Oil
1 tsp Vanilla
1 Egg
Preheat the griddle on medium heat and the oven to its warm setting. Make sure the grill is hot. If a drop of water or pancake batter sizzles the grill is ready. Pour batter onto the griddle. Cook about 3-minutes or until the bubbles start to pop. Then turn over and cook for about another minute. Place in oven to keep them warm. Makes 9-pancakes.
As an alternative you can add chocolate chips to the hot pancakes or any other fruit you might like to add. Other pancake recipes you might enjoy:

I made Bob applesauce pancakes this morning. That happens about once a year since I don’t eat pancakes. Let’s not tell him they could have been pumpkin. 🙂 I will keep your recipe for next year though.

I never had them until this year. And now I love them too!
I like to add chopped walnuts to mine and then heat real maple syrup to pour over. those and a good cup of coffee make any day good. I like to make them as waffles as well.
Walnuts are always a nice touch to so many dishes. I like that crunch. Nothing like a yummy breakfast to get the day started!

They are enjoyable – especially in the fall with left over pumpkin. I love a lot of spices. I hope you enjoy them – plus you can freeze or refrigerate if you have left overs. This recipe only makes about 9-pancakes.
