Pumpkin Pie Pancakes with Chocolate Chips!

Pumpkin Pie Pancakes Cover picture This is a great time of year when the leaves are changing colors and a crispness comes into the air. It is a time when everyone wants to make apple pies, pumpkin pies and a lot of other good fall inspired dishes. Often we have pumpkin puree left over and it would be terrible to throw it away. Here is a great pumpkin pie pancake recipe that is inspired by the pies I make with a lot of spices. I am a big fan of using a lot of different spices in my pies so it makes sense that my pumpkin pie pancakes should also have a lot of spices!

1 1/2 cups Flour
2 tbsp Brown Sugar
2 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Ginger
1/2 tsp Nutmeg
1/4 tsp Clove
1/2 tsp Salt
1 cup Skim Milk
½ cup Pumpkin Puree
2 tbsp Oil
1 tsp Vanilla
1 Egg

Preheat the griddle on medium heat and the oven to its warm setting. Make sure the grill is hot. If a drop of water or pancake batter sizzles the grill is ready. Pour batter onto the griddle. Cook about 3-minutes or until the bubbles start to pop. Then turn over and cook for about another minute. Place in oven to keep them warm. Makes 9-pancakes.
