I hope everyone is having a nice week! The weather here is getting nicer providing some nice opportunities to get outside for walks and outings. It seems that summers are so much shorter than winter so we try to pack in as many activities as possible! We are still working on finalizing our gardens by trimming back some bushes and mulching them. Once they are completed I will share a few pictures. On a warm evening I do enjoy sitting outside reading a Maeve Binchy book. I am re-reading Tara Road as it is one of my favorites! I see a movie was made after the book – has anyone seen it? Is it worth renting?
It seemed like a good idea to try another topping for our strawberry shortcake series! This time I made orange syrup and kept with my store-bought biscuits made at Wegmans. If you have any orange liqueur you could also add that to this syrup.
1/3 cup Sugar
1/3 cup Water
1 tsp Vanilla
¼ cup Fresh Orange Juice
1 – 2 cups Fresh Strawberries, sliced
Add all ingredients except the fresh strawberries to a saucepan. Bring to a boil and continue to boil for about a minute. Make sure to stir it to dissolve the sugar. Transfer to a small bowl and place it in a bigger bowl with ice to cool. Stir in strawberries and let stand for a few minutes. Then assemble your strawberry shortcakes.
