Mango Salsa Final Picture

Many of you know that I love Star Trek and The Next Generation. Captain Picard and Captain Kirk are my favorite Starfleet captains. I love how William Shatner keeps reinventing himself and at age 82 he is not showing any signs of stopping! Patrick Stewart has that fabulous Shakespearean voice! My respect for him goes beyond his professional credits – but how he is an advocate for women who are in abusive relationships. He is open about the childhood abuse he suffered. This interview is just awesome where he is vulnerable about his life and we see the positive impact of his advocacy. A good article to read where he talks about his childhood and his involvement in the Refuge charity: Patrick Stewart: the legacy of domestic violence. I love how Patrick uses his celebrity status to help those who have no place to turn. Plus his dedication for what he does for his mother who he could not help and his father since he was suffering from severe shell shock – with no help. He is an amazing person!

Now on to the cooking….
When grilling chicken, sometimes you want a topping that is not the standard BBQ sauce. I reviewed a lot of mango salsa recipes and I started with a simple recipe that focused on the mango. However, you can add any other ingredients like peppers or pineapples, which seem to be popular in mango salsa. I cooked my salsa as I believed it really brought the flavors together and made a nice, thick salsa. Plus if the mango is not quite ripe cooking it with other ingredients definitely helps the salsa. The below measurements are approximate as you may need more or less depending upon your taste tests.

3 large ripe Mangos, peeled, seeded, and chopped
3/4 cup Red Onion
1/2 cup Apple Vinegar
1/2 cup Brown Sugar
1/2 tsp Allspice
1 1/2 tsp Ginger
Cilantro – for topping

Optional
Pineapples
Red Peppers

Put all ingredients except for cilantro in a sauce pan. Cover and bring to a boil. Then simmer for about 20-minutes. Remove the lid and simmer until any excess liquid has evaporated.

      It is a Lenox. Butterfly Meadow Sentiment bowl. Home is where the heart is. I found it at Bon Ton. Maybe you can find it at another department store or online. It is beautiful!

      Yes, Patrick is a wonderful man! It can’t be easy to speak of his childhood so openly as he does. It is wonderful that he does and the positive impact he is having on women and childrens’ lives. He is a remarkable man!

  3. Great little mango salsa! You could use this on so many dishes. Beam me up Scotty! I am so far behind things living in Asia where we don’t see the movies only maybe after they have been out on DVD in the States. Is there are new Star Trek movie coming out?

      Yes a new Star Trek Movie “Into Darkness” came out a few weeks ago. I don’t know if you saw the 2009 Star Trek movie where they recast the characters from the original Star Trek. Into Darkness is before they start the five-year voyage into the unknown. That is where the original series started. In 2016 we are celebrating 50-years of Star Trek. We are expecting a new movie to celebrate the 50 years of fabulous sci-fi! Are you a Star Trek fan?

  4. Beautiful recipe and colors in the salsa:) Love the brown sugar, ginger and red vinegar in it, I also generally add a finely chopped serrano pepper or thai green chili to mine! Gives that delightful kick:)

      Thanks for the tip Peri! I am trying to grow Thai peppers this summer. They are tiny peppers that you dry and add to dishes. I am not sure if it will be the right type for this dish – but of course I have to see if they even grow. 🙂

  8. Janeway turned out to be my favorite, especially after she rescued 7-of-9 and Icheb. And the final Voyager episode really sold me on her.

      I really did not see Voyager but I wouldn’t mind seeing this episode. The Borgs were one of the most disturbing episodes of Star Trek. The whole idea of assimilation and a one-thought society is scary.

      1. I have seen every film and every episode of every series. Voyager was my series, followed by TNG then Deep Space Nince. I really didn’t like Enterprise, but I was already prejudiced against Scott Bakula because I didn’t like him in Quantum Leap. The very first film is my favorite; it was so thought-provoking.

        I saw every episode of the original series and TNG. I was not a fan of DS9 because I did not care for the space station concept. I preferred the space travel to different plants. Then I was working and going to college fulltime so I did not watch the other series. Right now I am rewatching TOS then I want to move on to the other series. I watched a few Enterprise but it was not for me. At least not the episodes I watched. I would like to watch Voyager. This fall they are having a DS9 mini-series with some folks from TNG.
