I enjoy making recipes with pumpkin during the fall months. There is just something so comforting about the aroma of pumpkin and the spices that hugs you when you enter the room! This year Greg and I made our own pumpkin puree from cooking pumpkins. Click here for an easy approach. Of course I wanted to make my favorite recipes – but first I wanted to try something new. A pumpkin, chocolately type dessert. I researched a few recipes to come up with a base recipe and then added the spices that we enjoy plus chocolate and nuts. It does not get much better than that! When cooking or baking with spices, I have a tendency to add more rather than less!

My Pumpkin Chocolate Chips Bite-Size snack is a rich, decadent dessert that is perfect in small pieces. Serve it warm so the chocolate chips are melted blending wonderfully with the pumpkin and spices. I like to add a little light whip cream and a touch of cinnamon sugar. What can I say… but… yummmm…..

Dry Ingredients
2 1/2 cup Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt

Blend together your dry ingredients and put aside.

1 1/2 tsp Cinnamon
3/4 tsp Ground Ginger
3/8 tsp Ground Cloves
3/8 tsp Ground Nutmeg

Blend together your spices and put aside.

1 cup Butter, softened
1 cup Sugar
2 eggs
2 cups Fresh Pumpkin Puree
2 tsp Vanilla Extract

Cream your butter in a mixer. Then add your sugar and blend. Blend in your eggs, pumpkin puree, and vanilla extract until well-blended. Then slowly add in and blend your dry ingredients plus spices.

Chocolate Chips and Nuts
1 – 2 cups of Chocolate Chips (milk chocolate and dark is a nice combination)
1 – 2 cups of Walnuts or Pecans, chopped (a blend of both is nice)

Stir in your chocolate chips and nuts.

This is where you can decide how rich you want your dessert. Two cups of chocolate chips will ensure each bite has a chocolate burst of flavor. An equal amount of nuts to chocolate is a nice balance to offset the sweetness of the chocolate. But I would recommend experimenting by trying a different combination each time. Plus try different types of chips and nuts.

Spray a 9 x 13 inch pan and bake in a preheated 375 degree oven for 35-minutes. Cool for a few minutes – then get your piece before it is gone!!
