Greg and I returned from a fabulous hiking trip to North Conway, New Hampshire. We spent 4-days of what felt like non-stop hiking to 6 waterfalls, several ledges, and a few nature trails! I think NH has to be one of the most beautiful states I have ever seen with such amazing views! I will miss those mountains and the fresh, pure air!

Over the upcoming weeks we will be sharing our hiking stories and the great videos and pictures we took. We enjoyed some great dinners and I am busy reproducing my versions. I hope to have these recipes ready as we publish our NH posts. We need some time to get through our videos, pictures, and memories to write our posts. In the mean time I am posting a recipe we enjoy in the summer when we have vine-ripe tomatoes and fresh basil. It is a simple recipe that is great as a side-salad for dinner.

Ingredients I Like to Use
Vine-ripe Tomatoes, sliced
Fresh Mozzarella Cheese, cubed or sliced
Fresh Basil
Grapeseed Oil

I make this recipe when I have vine-ripe tomatoes. Wash and slice them.

Pick your fresh basil, wash and dry it. You can chop your basil or leave it whole. I typically use my whole.

Slice or dice your fresh mozzarella cheese.

Layer the tomatoes on a platter; place your mozzarella cheese on top of the tomatoes, and then your fresh basil. Drizzle with grapeseed oil and serve!

      Thanks – we had a great hiking trip. A lot more pictures and videos to post. As for the salad, I have used balsamic vinegar and that is great too!. Sometimes I might mix it with the grapeseed oil or olive oil and it is really nice!
