Pico de Gallo

This is an easy to make recipe that allows you to have a wonderful compliment to your dishes. Plus it does not add many calories to your dish since ½ cup serving is about 35 calories and 2 grams of fat. Pico de Gallo goes wonderfully with my Tequila Lime Grilled Chicken. Ingredients
3 large Tomatoes, diced
½ cup Sweet Onion or Red Onion, diced
2 tbsp diced Jalapenos or 3 tbsp Green Chilies, diced
½ cup fresh Cilantro, chopped
1 tsp Salt
½ tsp Black Pepper
1 tsp Garlic, minced
1 tbsp Olive Oil
1 tbsp Apple Vinegar

Tips
If you do not like hot food you can substitute the Jalapenos with Green Chilies. You can add more or less of the ingredients depending upon how you would like to customize the flavors. To chop the cilantro I first rinse the amount I need and dry on a paper towel. Then I remove any stems and place on a clean paper towel. While this is drying I prepare my other ingredients. I take the washed and dried cilantro and bunch it together tightly. Then I carefully chop it and mix with the other ingredients.

Preparation
Mix all ingredients together in a large glass container until blended. Cover and place in refrigerator for several hours before serving.
