This is a wonderful recipe that can be made after work or if you have time it can be slow-cooked. Serve the Chicken Cacciatore over your favorite pasta, add a nice crusty Italian bread, a glass of red wine and you have a delicious, gourmet meal!

Ingredients
1 ½ pounds Chicken breast, boneless and skinless, cubed
Olive oil
2 tsp Garlic, minced
1 cup sliced Mushrooms
1 cup sliced Peppers
1 cup sliced Onions
1 cup Red wine
2 tsp Italian seasonings
3 cups Seasoned tomato sauce
Lawry seasoned salt
Pepper
Your favorite pasta!

Tips
This meal can be easily made after work especially if you follow my timesaving tips. I clean and cube my chicken during the weekend. I purchase my mushrooms, peppers and onions already sliced. For my garlic, I always keep a jar of minced garlic in my refrigerator. This saves not only on the prep but also clean-up time!

Preparation
Cover the bottom of a braising pan with olive oil and heat on low heat. Add cubed chicken to your braising pan, add Lawry seasoned salt and pepper. Stir occasionally. Remove any excess liquid leaving about 1 tablespoon. Add onion and pepper, cover and cook for a few minutes. Add garlic, Italian seasonings, and tomato sauce. Cover, and cook on low heat for about 30-minutes (longer if you want to slow-cook). Stir periodically. During the last 10-minutes, add the wine and mushrooms. Do not cover. Simmer until mushrooms are cooked and the sauce reduces.

During the last 10-minutes of cooking, prepare your pasta. When everything is done, spoon the Chicken Cacciatore over the pasta. You can serve this meal with crusty Italian bread, salad, and a glass of wine! Enjoy this wonderful, gourmet meal that can easily be prepared after work.
