This is a special treat that can be made for St. Patrick’s Day or any occasion when you want a special cake! Your guests will enjoy the wonderful blend of spices, cocoa, and nuts. I prefer this cake without an icing, but you could make a simple icing or use a whipped topping.
Ingredients
2/3 cup Butter (11 tbsp)
2 cups Sugar
½ cup Egg substitute
¾ cup Milk, 1%
2 cups Flour
2 tsp Baking powder
1/8 tsp Salt
2 tsp Ground cinnamon
1 tsp Ground cloves
1 tsp Ground nutmeg
1 tsp Vanilla
½ cup Cocoa
2 cups Mashed potatoes
1/2 cup Pecans, chopped
1/2 cup Walnuts, chopped
Tips
I bought Yukon Gold mashed potatoes from my local grocery store. You could substitute any nuts that you enjoy and you could also add raisins.
Preparation
Preheat oven to 325 degrees. Grease and flour a 10” Bundt pan. In a large bowl, combine the flour, baking powder, salt, cocoa, cinnamon, cloves and nutmeg. Set aside. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in egg substitute and vanilla. Add the flour mixture alternately with the potatoes and milk. Stir in nuts. Pour the batter into the prepared pan and bake for 1 to 1 1/2 hours, or until a toothpick inserted into the middle of the cake comes out clean. Cool before slicing. Serve at room temperature or slightly warm and enjoy!

It is really good and a different type of cake since it has mashed potatoes as an ingredient. Makes it more fun!
