Orange Walnut Chicken Over Jasmine Rice – Slow Cooker Version

This is an easy to prepare, wonderful dish that can be made in your slow cooker. I like to serve this recipe over Jasmine rice, with mandarin oranges topped with toasted walnuts. On the side I serve a spicy orange sauce that I buy at my local grocery store.

Ingredients
1 ½ pounds boneless, skinless chicken breast (cut into pieces)
Lawry Seasoned Salt
Black pepper
Sweet onion, chopped
1 cup Orange marmalade, sugar free
1 cup Orange juice
½ cup Lemon juice
4 tbsp Honey
2 tsp Soy sauce (less sodium)
2 Garlic cloves
1 ½ tsp Ground ginger
Walnuts, chopped and toasted
Mandarin oranges
Hot cooked Jasmine rice
Spicy Orange Sauce, store bought – optional

Tips
I make my rice in a rice cooker because once the rice is done, the rice cooker changes to a warm setting. I basically add water, rice, turn it on and walk away. No more monitoring a pot of rice to reach a soft boil to reduce the temperature. I use my smaller slow cooker so this recipe will be done in about 2 to 3 hours.

Preparation
Add seasoned salt and pepper to the chicken and placed into slow cooker. Add all ingredients except for: walnuts, mandarin oranges, and rice. Let cook for several hours in the slow cooker. Brown the walnuts in a skillet on low heat on the stovetop. Stir often. When chicken is done, serve over hot cooked rice, top with walnuts and mandarin oranges. Add Spicy Orange Sauce if you would like more flavor. I hope you enjoy this dish!
