You can make this tasty oatmeal dish to prepare your breakfast for several days by storing it in the refrigerator. When ready to serve, microwave and top with yogurt and fresh fruit. This recipe takes about 10-minutes to prepare and a few minutes to reheat and assemble.
Ingredients
2 cups quick oats
3-1/2 cups skim milk
2 to 3 tbsp dark brown sugar (to your taste)
1/2 tsp nutmeg
2 tsp cinnamon
1/3 c. your choice of dried fruit
4 tsp walnuts, chopped
1/2 cup plain or vanilla Greek Yogurt
Fresh fruit
Tips
Try different dried fruit and fresh fruit for your toppings. If you do not have fresh fruit, top with a Greek Yogurt containing fruit.
Preparation
Mix the quick oats and milk. Cook in the microwave. Don’t overcook because you will need to add ingredients and reheat before serving. When the oatmeal is done add brown sugar, nutmeg, cinnamon, and dried fruit.
Spray the inside of four 16-ounce microwaveable ramekins with cooking spray. Sprinkle walnuts in each. Spread cooked oatmeal evenly in each container.
Cover and refrigerate at least 2 hours or overnight. Once chilled completely, remove from refrigerator. Reheat ramekins in microwave until oatmeal is warm.
Loosen the oatmeal from the sides using a butter knife. Turn over the ramekin on to a serving dish tapping the bottom. Top your oatmeal with 2 Tbsp of Greek yogurt. Garnish with sliced fresh fruit. Enjoy a wonderful, tasty, and healthy breakfast!
