This is not only an easy-to-make appetizer but it is delicious! If you typically serve shrimp with cocktail sauce, take a few minutes to make this recipe. Your guests will love you!

Ingredients
12 medium-cooked shrimp, thawed and chopped
2 vine ripe tomatoes, diced
3 large, fresh basil leaves, chopped (or 1 tbsp dried basil)
2 Tbsp diced red onions
1/8 cup or 1 ounce grapeseed oil (or olive oil)
1/8 cup or 1 ounce balsamic vinegar
Bruschette toast
Salt and pepper, to taste

Tips
To save time I use a bruschette toast found in my local supermarket. If you cannot find a similar toast, you can make your own. Slice a French baguette into slices; brush with melted butter season with garlic, salt and pepper. Baked in a 350 oven for 4-5 minutes.

You can assemble all the ingredients except for the shrimp, oil and balsamic vinegar earlier in the day. Mix your final ingredients and serve for your gathering. I like to use grapeseed oil due to its clean, light taste.

Preparation
Combine and toss together tomatoes, basil, onion, grapeseed oil, and balsamic vinegar. Add the chopped shrimp mixing to incorporate flavors. Chill for an hour in the refrigerator or you can serve immediately. Top bruschette toast and serve.

  1. That looks really good, Bernice! And, a nice change of pace from shrimp cocktail. I was also thinking the topping would be really good on polenta rounds. Now, I’m getting hungry!

      Thanks Allison! It is a great topping that like you said could be used for other dishes. Plus you could use chicken or other meat for the shrimp.
