Baked Tilapia with White Wine Sauce and Asian Twist

This baked fish has a light sauce and is quick to make using ingredients that are found in many pantries. I typically keep a pack of Tilapia in the freezer for a quick meal. This dish can be served over rice or pasta since it makes a delicious sauce. It also pairs nicely with many side dishes.

Ingredients
4 Tilapia fillets, rinsed and dried (or 2 larger mild fish)
1 Sweet onion, sliced thinly
Italian seasonings

Vinaigrette:
¼ cup White Wine (dry, or chicken broth)
1 tbsp Lemon juice
2 tbsp Soy sauce, light
3 tbsp Olive oil
3 tbsp Rice vinegar
Salt
Pepper

Tips
I like to use Chardonnay wine. Use a quality white wine that you would drink since its flavors will be incorporated in the dish. If you do not like to cook with wine, use a quality chicken broth. Do not use a cooking wine as it will introduce a lot of sodium into your dish.

Preparation
Preheat oven to 400. Spray a baking pan with non-stick spray. Mix the vinaigrette ingredient with a fork or whisk to blend. Place the fish in the baking pan. Place the sweet onions on top of the fish. Sprinkle with Italian seasonings. Pour vinaigrette over the fish, cover with foil. Cook for 15 – 20 minutes. Serve with your favorite side dish and enjoy!
