This is a delicious version of baked chips that is an enjoyable addition to my Kicked Up Smoked Turkey Sandwich. I love potato chips but not all the fat and bad ingredients. This recipe uses healthy oils and I bake them instead of deep-frying the potatoes. They are so good you cannot stop eating them!
Ingredients
2 Medium sized potatoes, washed and dried
2 tbsp Olive oil
2 tbsp Grapeseed oil
1 tsp Italian seasonings
½ tsp Garlic, minced
1/8 tsp Sea salt
Tips
Use a mandolin to slice the potatoes thinly. Do not peel.
Preparation
Preheat oven to 375. Line two large baking sheets with parchment paper. Spray lightly with cooking spray. Slice your potatoes thinly. Place the sliced potatoes in cold water for ten-minutes. Drain potatoes, dry with paper towels, and place in a clean bowl. Assemble dressing and pour over potatoes, coating evenly.
Arranged potatoes slices on prepared baking pans, do not overlap potatoes. Place in oven and bake 10 – 20 minutes until brown. Place cooked potatoes on a plate lined with parchment paper. Let dry for about 5-minutes and serve. The Kicked up Baked Chips are delicious warm or cold!
