I just adore bread pudding! But I do not like all the calories and fat that a traditional recipe provides. This is a healthier version that is easy to make and is packed with delicious flavors! I selected ingredients that I typically have in my pantry so I would only have to purchase the cinnamon bread and apples. Typically, I have a container of egg substitute in our freezer and I always have skim milk. Each serving is about 250 calories and 6.5 grams of fat. I hope you enjoy my spin on bread pudding where reducing calories and fat does not mean compromising flavor!
12 Slices Cinnamon Bread, cubed, crust removed
1 cup Skim Milk
1 cup Egg substitute
2 tbsp Dark brown sugar
2 tsp Cinnamon
¼ tsp Nutmeg
¼ tsp Allspice
2 tsp Vanilla
¼ cup Raisins
¼ cup Walnuts
¼ cup Semi-sweet chocolate morsel chips
2 Medium Apples, diced or sliced
Low-fat whipped topping or ice cream for topping (optional)
You can eliminate butter and heavy cream if you use skim milk and add spices plus other tasty ingredients. The key is to have the correct ratio of wet to dry ingredients. You can try different types of nuts, apples, and morsel chips to experiment with flavors.
Preheat oven to 350. Spray a 9 x13” baking pan with non-stick spray. This recipe makes 8-servings. It takes about 35 to 45 minutes to bake and about 10 to 15 minutes to prepare the ingredients.
Place cubed cinnamon bread in a large bowl. In another bowl whisk milk, egg substitute, brown sugar, and spices together. Pour over cinnamon bread and mix. Add raisins, walnuts, chocolate chips, apples and mix.
Spoon the bread pudding mixture evenly into prepared baking pan. Bake 35 to 45 minutes until golden brown. Serve warm with a whipped topping or ice cream. Be careful not to add too many calories with your topping! Enjoy your healthy and tasty dessert!
